Anchovies from the Cantabrian Sea are prized for their thick fillets, savory depth, and distinctive rosé hue with warm tobacco undertones. Naturally larger and meatier than many other varieties, they offer a tender bite and a rich, lingering flavor that reflects the exceptional waters they come from.
Bordering the northern coast of Spain (FAO area 27), this cold, plankton-rich sea is shaped by powerful currents that create the ideal habitat for anchovies to thrive. To endure these brisk conditions, the fish grow bigger and build higher natural fat reserves — a key factor behind their buttery texture and complex taste.
The fishing season runs from April through June, when anchovies reach their peak organoleptic quality. Caught with strict respect for the seabed and surrounding marine life, they are immediately handled by expert salters. Within just six hours of landing, the anchovies are carefully selected and preserved in salt in nearby factories in Santoña, a town internationally renowned for its centuries-old anchovy tradition.
The result is an anchovy of extraordinary character: clean, elegant, and intensely flavorful — a true delicacy shaped by sea, craft, and time.
